When you consume caffeine neurons fire off in your brain. Excess neuron activity is thought to trigger your pituitary gland to secrete a hormone that tells your adrenal glands to produce adrenalin. This puts you into 'fight-or-flight' state. When this adrenal high wears off later you feel a lag - fatigue, irritability, headache or confusion.
After prolonged use of caffeine you body can enter a state of adrenal exhaustion - where your caffeine consumption has simply pushed your adrenal glands so much they've fatigued.
Different people will have different reactions to caffeine, however caffeine can lead to dependence.
